Job Summary
As a Chaat Chef at Carnivale, you will be responsible for preparing a wide variety of Indian chaat and street-food dishes — from appetizers to full snacks — ensuring consistent taste, quality, presentation, and hygiene. You will also assist in maintaining kitchen cleanliness, ingredient inventory, and smooth kitchen operations during busy service hours.
Key Responsibilities
Prepare and cook a variety of chaat and Indian street-food dishes (e.g., pani-puri/golgappe, dahi-bhalle, aloo-tikki chaat, pav bhaji, bhel puri, dahi puri, samosa chaat, and other similar items) with authentic taste and consistent quality.
Prepare and manage chutneys, sauces, toppings, and accompaniments unique to chaat (e.g. tamarind chutney, mint-coriander chutney, yogurt, spices, garnishes).
Ensure timely cooking and serving, especially during peak hours — maintain portion control and cook to order so dishes are fresh and represent your best.
Maintain kitchen hygiene and safety standards: ensure proper handling, storage of raw materials, clean workstations, appropriate sanitation — in compliance with food safety norms (e.g. FSSAI / internal hygiene rules).
Assist in inventory management: check stock of ingredients (vegetables, spices, sauces), report shortages, manage expiry/ fresh rotation to keep supply fresh.
Work collaboratively with other kitchen staff; help during broader kitchen operations if needed (e.g. prep work, support during live-counters or busy service times).
(Optional / desirable) Provide input for new chaat-menu items — creative ideas for seasonal or fusion chaat — and experiment within restaurant’s standards.
Requirements / Qualifications
Prior experience as a cook or chef specializing in Indian street food / chaat in a restaurant or food-service setup.
Good knowledge of Indian spices, chutneys, sauces, and chaat-specific recipes, along with understanding of hygiene and food-safety practices.
Ability to work efficiently in a fast-paced kitchen, especially during peak hours; capable of multitasking, handling pressure and delivering consistent quality.
Basic culinary skills (knife work, chopping, frying, assembling dishes, garnishing), attention to detail for taste and presentation.
Good teamwork and communication skills — ability to coordinate with kitchen staff, maintain cleanliness and follow kitchen protocols.
Desired / Preferred (but not mandatory)
Prior experience in a similar restaurant or chaat-specialty outlet.
Creative flair to suggest or design new chaat dishes or seasonal specials.
Basic understanding of food costing, portion control, minimizing wastage, and efficient kitchen operations.
